◖奈良漬越瓜
奈良漬-越瓜中的越瓜,來自貢寮的「正先農場」。農人阿先承接上一代所開拓的山地,從事農耕已十餘年,以友善自然為初衷,一邊復育水梯田的同時,一邊亦守護了山村的生態,作物是阿先大哥,用心澆灌種植長成。
使用宜蘭中福酒廠的酒粕,陳年一輪春夏秋冬,越瓜已透出清甜,和著濃淡適的酒香。原味自家醃漬的自然風味,完全不使用甜味劑、防腐劑及色素。
過去日本清酒聞名世界,第一個將酒粕用在食物上的就是奈良漬,奈良漬隨著食材裡酒粕的成熟,酒粕中的碳水化合物和氨基酸轉變(也可稱為梅納反應),顏色由初時的淺褐逐漸改變為深咖啡,是漬物自然色——琥珀!
