精選鮮採友善耕作的白玉蘿蔔,經一個月反覆浸漬、搓揉、翻動後,在冬日暖陽下自然風乾,年年復年年,為的就是保持蘿蔔胚體的均勻、柔軟、Q彈。為了確保風味不流失,除風吹日曬之外,全程都不擠壓出水,讓風味鎖在裡面,每隔2-3日,職人必須手工搓揉,讓內部水分散逸到表面,如此繁複的工序,就是為了保留蘿蔔乾的豐富味覺層次,就是職人的醍醐之味。
